Clitocybe odora var. pacifica is one of the few distinctive edible Clitocybe species. Not only is the color highly unusual for a mushroom but it is one of only a handful of species with the odor of anise. Use one or two specimens of Clitocybe odora in a meal you are preparing and it will give the whole meal a licorice flavor.
