Russula xerampelina has a brittle flesh like a Lactarius but does not exude milk when cut. Russula xerampelina has a pleasant mild taste when nibbled raw and a distinctive odor of shellfish. It also slowly bruises brown. Other than the odor and the brown bruising reaction, Russula xerampelina looks like many other members of its genus. Russula xerampelina is a favorite edible of mine. The flavor is great and it remains delightfully crisp when cooked.
