Russula brevipes var. acrior is illustrated here. Russula brevipes may be the most widespread and distinctive member of the genus. It has a firm flesh and lasts a long time after fruiting. Unfortunately, it is flavorless, though some people use it as a water chestnut substitute in cooking since it remains crisp and absorbs flavors from whatever it is cooked with.
