Boletus edulis comes in several cap colors and there are several closely related species that are all edible and choice. Always look for the large size, netting on the stem, the absence of a bruising reaction, and pores that are stuffed with white material when young. On all but the youngest Boletus edulis buttons, the cap tends to cook up a bit slimy so I often eat the stems and dry the caps for later use. As with any food, some people have edulis sensitivity, sometimes associated with alcohol consumption.
