This is Cantharellus cibarius var roseocanus . It is one of what may be several choice edible look-alikes to the Yellow Chanterelle, Cantharellus cibarius . Yellow Chanterelles are among the most highly prized mushrooms. They fruit over a long season and last for a long time without getting wormy. In the Pacific Northwest millions of pounds of a close look-alike, Cantharellus formosus, are harvested each year. Many are exported for sale in Germany. The Yellow Chanterelles are easy to learn to recognize. Some slightly similar species of gilled mushrooms have an unpleasant flavor and one vaguely similar species is poisonous.
