Cantharellus cibarius var. roseocanus , a Western version of the widespread Yellow Chanterelle, is a basidiomycete as are all remaining mushrooms in this program. When viewed under a microscope, basidiomycetes have spores on club-shaped structures called basidia. A ll of the yellow Chanterelles are choice edible species. They are quickly distinguished by undersides with blunt forking ridges, rather than the blade-like gills of many basidiomycetes. In Germany Chanterelles are known as Pifferlings, little pepper, because of their sharp taste if eaten raw. As with all mushrooms, cook them before eating them and eat only a small amount the first time in case you have a food sensitivity. Always save a few uncooked and uncut in case you made an identification error.
