This slide shows another collection of morels. There are many types of morels including white, yellow and black and the precise nomenclature is confused, at least in my mind. However the true morels all are hollow with a ridged and pitted cap attached at its lower margin to a short hollow stipe. The white and yellow varieties are generally better tasting than the black morels. While this delicious species is one of my very favorite edible mushrooms, I have encountered some collections that tasted simply awful. Morels generally fruit in May and can appear in old apple orchards, in areas where elm trees have died, and along river banks, sometimes appearing to fruit out of pure sand. At high elevations morels can fruit clear into July and sometimes even are found in August. During May in the mid-west there are morel hunting contests. Prime locations are closely guarded secrets. Many people fondly recount the day of their huge find of basket upon basket of morels and try to forget the years when they find none.
