The Shellfish-Scented Russula, Russula xerampelina, is characterized by a distinctive odor of shrimp or crab and a tendency for the stipe to slowly bruise brown. Like all Russula species, the cap, gills and stipe are brittle and pop cleanly like a piece of chalk when broken. The gills are creamy to yellowish-orange and the cap color varies from purplish-red with yellow or greenish tones to a rich purplish-black. Russula xerampelina var. elodes is illustrated here. Russula xerampelina may represent a complex of closely related species sharing a shellfish odor. These Russula species are quite tasty and remain delightfully crisp when cooked.
