True morels, like these black morels, are ridged and pitted with a stem that is fused to the bottom of the cap and a hollow interior. Black morels appear in many habitats, sometimes even randomly in my garden or in a friend's pasture. Old apple orchards are a great place to look. They can fruit abundantly in bark mulch one year after new construction. A few years ago friends and I gathered bathtubs full of black morels near a newly constructed freeway interchange, though I did worry a little about lead poisoning from the car exhaust and also about herbicides that may have been used in the landscaped beds.
