Slide 53.
Ramaria rubrievanescens is a similar and similarly choice species with a nutty taste that is distinguished by having branch tips that rapidly loose their pinkish coloration as they elongate in age, become first white and then cardboard color. In age there are countless Ramaria species with which Ramaria rubrievanescens could be confused. Besides, Ramarias are best eaten when young, while the branches are still short and stubby. Once the branches have elongated, I leave Ramarias to reproduce and to delight others who may happen upon them.
