Ramaria rascillospora var. scatesiana, Kit's Creamy Coral, is another meaty, common and abundant yellow spring and summer coral. Ramaria rascillospora var. scatesiana fruits under conifers in the Cascades and Rocky Mountains spring through fall and under oaks in California in the fall and winter. There are several similar species and none are seriously poisonous, though some do cause gastric distress in some people. Bitter specimens are encountered at times. I never collect the small stringy corals, sticking instead to the large meaty ones with a fleshy base. Since they are difficult to clean, I only collect the ones where the branches have not yet elongated and filled up with forest debris. However, prime young material may find itself incorporated into scrambled eggs in the morning or into a pickle recipe.
