Hygrophorus subalpinus is a common snowbank fungus of
the western mountains. Most who have tried it report that Hygrophorus
subalpinus has neither good texture nor much flavor. I have cooked
prime, firm young specimens and my class found them to be delicious. However,
the mushrooms soon turn soft and unpalatable. Furthermore, these are not
beginners mushrooms. If you decide to try them, make certain that you can
absolutely distinguish Hygrophorus subalpinus from the potentially
deadly Amanita smithiana.
