Pleurotus ostreatus is one of several choice edible species
of large fleshy white to lilac-spored mushrooms known collectively as Oyster
Mushrooms. Pleurotus ostreatus fruits from spring on into
fall on hardwood logs and stumps. Areas with abundant alder, cottonwood,
willow, elm or sycamore are great places to look for oyster mushrooms.
They will also fruit on oaks and other hardwoods. Pleurotus ostreatus
is very easy to learn to identify and is also easily cultivated on straw,
paper or hardwood chips. If you drag home a fruiting log and keep it well
watered, it will produce regular crops all summer.
