I used to call this species Morchella crassipes, though I now know that is not correct. This is simply one of the huge Black Morels that sometimes reach well over a foot tall. Like all morels it must be thoroughly cooked before consumption. I think that the flavor resembles a fine New York cut steak. However, I have had collections of morels that had a strong unpleasant smell and flavor when cooked. Also, some people are made ill by morels, so if you are new to the sport of mushroom hunting, remember to always sample lightly the first time you try any new species. If the morel smells bad, it is likely to taste bad.
