Flammulina velutipes, Velvet Foot or Velvet Stem, is an attractive little mushroom that fruits on or near logs and roots of hardwoods in cold weather late in the winter or early in the spring. Flammulina velutipes is eaten by those folks hungry for mushrooms in the off-season. Peel the sticky skin before cooking. It has compounds said to protect against cancer but also has compounds potentially damaging to the heart. It is cultivated and sold in asian markets as enokitake. It is cultured to grow very tall with stems tightly crowded together by growing in a jar. The caps remain very small and the cultivated version is pure white with a non-velvety stem.
