Albatrellus ellisii or Scutiger ellisii is a hefty conifer-lover that is easy to identify from its green-staining pores. Albatrellus pescaprae is similar but does not stain green. If you simmer it slowly and thoroughly so that it does not toughen, Albatrellus ellisii has a mild flavor and a pleasant chewy texture.
