Flammulina velutipes is a widely cultivated species
known as Enotake or Enoki. It contains a polysaccharide, which is apparently
an immune system stimulant that may have indirect anticancer properties.
Whether the polysaccharides it contains can be effective in preventing
cancer has yet to be shown. Research has also revealed that Flammulina
velutipes contains a red cell-destroying toxin, though the toxin is
either not absorbed in humans or is destroyed either in cooking or by digestion.
