Course Description

This class will explore human biology from the vantage point of health, nutrition, and the environment.  Emphasis will be placed on understanding the health consequences of diet and lifestyles.  Beyond analyzing the physical environment students will also take into account environmental factors such as ones’ culture and social location.  This course will also develop quantitative skills in data collection and statistical analysis. 

 

Student work will include maintaining diet and exercise diaries, and prepare healthy foods and modify traditional recipes in light of their understanding of nutrition.  Classes will consist of lectures, discussions, laboratories, in-class workshops, and field trips.
