SHOPPING LIST FOR CHAOZHOU RECIPES
Meat:
1 lb. pork shoulder, sliced or chopped into bite-sized pieces
3-5 lbs. of short ribs
1 large flounder, monkfish, or other freshwater fish
Dairy:
6 eggs
Produce:
2 bunches of mustard leaves, washed and chopped into large pieces
6” fresh ginger
2 bitter melons, halved and seeded, then chopped into bite-sized pieces
1 c. yellow soybeans, softened and husked by soaking in water for 1-2 hrs.
beforehand
1 lb. of pickled leafy vegetables
Fresh sliced fruits in season (guava, apples, pears)- enough for dessert
Grains:
3 c. short grain white rice
Miscellaneous:
1 8-oz. package of daikon radish cake, thawed, rinsed, and cut into lengthwise
pieces
5 pieces of dried shiitake mushrooms, softened by soaking for 5 minutes in
warm water
8 T vegetable oil
1 small bottle of fish sauce
2 c. soy sauce
salt
pepper
Beverages:
Gongfu Tea (served after dinner)
