SHOPPING LIST FOR SOUTH INDIA RECIPES
Meat:
2 lbs. beef (tenderloin or a fattier cut) cut into bite-sized cubes
Dairy:
1 quart whole milk
1 quart plain non-fat or Greek-style yogurt
1 T ghee
Produce:
6 cloves garlic
3 T ginger root, finely chopped
1 large onion, sliced
2 medium onions, diced
4 dried red chili peppers
1 small green chili pepper, sliced
1 pound okra (smaller are better) cut into 1/4 inch pieces
Grains:
2 c. Kerala red rice (available only at Indian grocery stores)
4 T basmati rice
Miscellaneous:
2 t. cumin
2-1/2 t. cayenne (to taste)
3 t. coriander
2 t. black pepper
2 t. black mustard seeds
1/4 t. fenugreek powder
1/4 t. turmeric powder
3 t. white vinegar
1 cinnamon stick
1/3 c. sugar
1/2 t. cardamom powder
3 T unsalted cashews, broken into pieces
3 T. golden raisins
8 cloves
2 T coconut oil for frying (not for hair oil)
3 T vegetable oil
1/2 c. dried coconut flakes
30 curry leaves (available only at Indian grocery stores)
1 jar of mango pickle or chutney
