SHOPPING LIST FOR PHILIPPINES RECIPES

Meat:
12 pieces of chicken parts
a small handful of tiny, dried, salted shrimp (èbi)

Produce:
1 large or 2 small shallots
12 cloves garlic
4 medium juice oranges
2 lemons
1 small lime
3 chayotes
5 small shallots, or 1 medium onion
a few medium-hot red peppers (such as “cherry bomb”), to taste
a few tiny, green or yellow hot peppers, whole (optional)
2 small, firm tomatoes

Grains:
3 c. Thai jasmine rice

Miscellaneous:
3 kemiri nuts (optional)
1 thin slice of fresh or frozen galangal
1 salam leaf
1⁄2 t. ground coriander
1⁄4 t. ground cumin
1 large bottle cooking oil
a nickel-sized slice of terasi (fermented shrimp paste, also called blacan)
2 c. coconut milk
1 package very firm, coarse-textured tofu (not the smooth and soft Japanese style)
salt
