SHOPPING LIST FOR SUNDA RECIPES
Meat:
2 lbs. chicken meat (already boned and cut into bite-sized pieces)
Produce:
2 limes, juiced
2 onions
2 cloves garlic, sliced
3" fresh ginger root, crushed
3 salam leaves (try your local Vietnamese shop)
2” piece of galangal, sliced (ditto)
4 carrots, peeled and julienned
3 cucumbers, peeled, seeded, and julienned
1/2 cabbage
several stalks of lemon grass
12 fresh tropical fruits of varying types
Grain:
3 c. white rice
Miscellaneous:
1 c. rice vinegar
4 c. coconut milk
2 T vegetable oil
1 t. tamarind paste
1-1/2 t. coriander
1 t. cumin
1 pinch chili pepper flakes
4 candlenuts (or blanched peeled almonds), finely chopped or crushed
1 T sugar
salt
pepper
Beverages:
Weak black tea, unsweetened (for dinner)
Strong black coffee, sweetened (for after dinner)
