SHOPPING LIST FOR ANDALUSIA RECIPES
Meat:
None, although you may want to add seafood to the paella. It is common to
add
about a half pound each of mussels (washed and de-bearded), clams (washed),
and
shrimp or prawns (washed, peeled) to the paella in the final 10 minutes of
(covered) cooking.
Dairy:
5 cups milk
Produce:
6 tomatoes (or, if it’s the winter, 3 cans of whole or diced tomatoes)
1 cucumber
2 small onions
2 small green bell peppers or 1 large
1 red bell pepper
3 cloves garlic
8 mushrooms (or 1 small can)
1 small cauliflower
1 bunch of parsley
2 c. green beans
1 can artichoke hearts
Grain:
3 c. short-grain white rice
1 c. basmati rice
Miscellaneous:
2 t. saffron
1/2 c. sugar
1 cinnamon stick
1/2 tsp cinnamon
Pinch of nutmeg.
1/4 c. seedless raisins
1 T slivered almonds
1/4 c. red wine vinegar
salt
